The Peruvian ground apple (Smallanthus sonchifolius) is a perennial tuberous vegetable in a hot climate. It is native to Peru, where it is called "yacón". This vegetable was introduced to France in the 19th century, but was not successful at that time.

What a shame, because its tubers are delicious, with their crunchy texture and sweet taste, between pear and watermelon! Raw, they are juicy and refreshing grated for example. Cooked, they keep their crispness and go perfectly with winter casseroles. They can even be eaten as a dessert, covered with a melted chocolate coulis!

In addition to being edible, the Peruvian ground apple is very ornamental. Its flower stalks can reach up to 2 meters high, for a width of 40 to 80 cm, and are provided with pretty yellow flowers in summer. The leaves of Smallanthus sonchifolius, with an exotic appearance, have a serrated triangular shape.

Little known, the cultivation of the Peruvian ground apple is easy in the vegetable garden. It is planted around mid-May, 5-10 cm deep. It appreciates a rich, well-drained soil and a sunny exposure. The tubers are harvested in the fall, keep cool and can even be replanted the following spring! The Peruvian ground apple will easily find its place alongside other unusual vegetable plants, such as tuberous parsley.

Advice: when the plant is 20 cm, it is necessary to butter the foot on 10 cm, this will promote the development of the tubers, space each foot 1 m, because this plant has a large development.
