Calendula officinalis or pot marigold, ruddles, common marigold or Scotch marigold : The young leaves and the flowers of the plant are edible. A delicious edible flower. Flavors range from spicy, bitter to peppery. Their sharp taste resembles saffron. The marigold has beautiful petals in golden-orange tones. Sprinkle on soups, pasta, rice dishes, herb butter or salads. The flowers are colourfast in warm dishes.

Centaurea cyanus or Cornflower : The flowers of the plant are edible. The flowers have a slightly sweet to spicy, clove-like taste. The cornflower has beautiful petals in shades of blue, purple and pink. The beautiful, clear hues of the cornflower come into their own beautifully in a salad, pasta or ais garnish.

Tropaeolum or nasturtium : The flowers taste slightly spicy and peppery. The pistil and stamens are more spicy and more stimulating. The leaves of the East Indian cherry have a mustard-like taste. The nasturtium has beautiful petals in warm and clear hues. The flowers and leaves can be eaten raw or blanched. The nasturtium can actually be combined with all spices, it tastes great with everything.
