Sage is a perennial aromatic plant, very decorative, with evergreen, silvery-green, highly fragrant foliage and blue-violet flowers that bloom from May to August. It will find its place in your vegetable garden alongside rosemary or near rose bushes, as it repels aphids.
Sow sage in a sunny location in light, fertile, and rather dry soil. Sow under cover from February or directly in the ground from April. Place 3 to 4 seeds in holes spaced 40 cm apart that you have previously dug, then thin to leave only one plant per hole. Sage leaves can be harvested year-round.
In cooking, the powerful, lemony, and camphoraceous, slightly bitter aroma of fresh sage leaves pleasantly enhances pork and poultry dishes, marinades, vegetables, and stuffings. You can use it to make flavored vinegar and oil, as well as herbal teas.
