The Salad Burnet , an aromatic plant to rediscover
The Salad Burnet is a perennial, very hardy aromatic plant whose leaves have a flavor reminiscent of cucumber or green nuts.
Easy to grow, it settles in limestone soil, dry and preferably in the sun. It has its place in a rock garden with other plants adapted to drought but also in the kitchen garden or in a pot. Sow the burnet in the spring (from April). Loosen and amend the soil, place the seeds in holes 3 cm deep spaced 25 cm (3 seeds per hole). Cover them with a mixture of earth and potting soil, tamp and sprinkle. Thin out if necessary (keep one seedling every 25 cm).
The harvest is from March to October, preferably choose younger leaves softer. Fresh, they are used in cooking to season salads, flavor sauces and marinades or flavor eggs.
